Apple-raspberry vinaigrette

Tarragon-walnut chicken salad

Makes ½ cup

The flavors of this dressing are especially compatible with sections of grapefruit or slices of avocado on a bed of greens.

3 tablespoons frozen apple juice concentrate (undiluted), thawed
3 tablespoons raspberry vinegar
2 tablespoons canola oil
1 tablespoon honey
½ teaspoon poppyseed
Pinch of dry mustard powder, or to taste
Dash of salt, or to taste

Whisk together all the ingredients in a small bowl. Taste and adjust the seasoning. Store in a tightly closed container for up to 1 week. Whisk or shake before serving.
