Chinese noodles with sesame-pepper dressing
This spicy noodle side dish is the perfect accompaniment to Teriyaki Chicken, and it is equally intriguing served warm, chilled, or at room temperature. If you’d like, add vegetables, such as shredded carrots, diced cucumber, or diced red bell pepper.
4 ounces Chinese wheat-flour noodles
2 tablespoons soy sauce
2 tablespoons white rice vinegar
1 tablespoon dark (Asian) sesame oil
¼ teaspoon red pepper flakes
1/8 teaspoon freshly ground pepper, or to taste
Bring a large saucepan of water to a boil over high heat. Reduce the heat to medium-high, add the noodles, and cook for about 3 minutes, or according to package instructions, until tender.
Meanwhile, whisk together the Sesame-Pepper dressing ingredients in a small bowl.
When the noodles are done, drain well; return to the pan. Whisk the dressing, add it to the noodles, and toss. Taste and adjust the seasoning.
This dressing will keep for 1 week in a tightly closed container in the refrigerator. The Chinese Wheat Noodles with Sesame-Pepper Dressing can be refrigerated for 2 days.
